Another question from our business team -- is there any way to use information in our user profiles to 'flag' individual topics?

For example, if we had information in each user account regarding whether or not that particular user was a magazine subscriber, could we somehow use that info to 'flag' topics he/she starts? Maybe display a little icon beside each post or something?

There is no way built into the application to do that. I think it may be possible with Javacript or CSS as long as the userOID is identifyable within a DIV in the HTML...

Which I dont think will be available to you. The only thing I can think of is to use the users custom title to add a little pizzazz to their posts. It wont change the topic list page, but it would within the reply list page.
