How can I customize the field shown in the Membership Directory, do I have an option to customize this area. One particular field used in the member's profile I would like to use in the member's directory, is that possible?

The features of the Member Directory are rather limited currently. You can view all of the settings for the Member Directory in the Control Panel at:

CP -> Groupee Community -> Members -> Member Directory

From there you can enable and toggle some of the columns, but nothing as extensive as what you are requesting.
