I have had a few users complain that some of the colors that the chat interface defaults to are too difficult for them to read. It appears to randomly select colors for people as they enter the room. I guess for some of the older folks the light green and yellow are especially difficult.

Is there any way to default to a color with a better contrast? Id still like the users to be able to change the color, but only if they are specifically looking for something else.

There isn't a way to change the default font colors used by the Chat Interface. User fonts will always default to Green.

Users can always change their font color once they've entered the chat though. To do this they should click the Green Color button next to the Text input field.

Another option available to you as a site admin, is to change the Chat Skin. This can be done through the Eve Control Panel at Chat > Master Settings > Chat Skin dropdown

It's one thing if some users don't like the color another user has picked, but if each user appears to be assigned a color randomly upon arrival, that may need to be addressed in the ticket you submitted.

The (very) few complaints Ive received are all about users not being able to read the other chatters text. They understand how to change their own, but dont want to have to ask another person to change to a more readable color. Make sense? Its really a non-problem, but i thought id ask just in case.

Due to the nature of the color-picker and the variety of background colors, it's currently up to the users to ensure that their text is able to be read by other chat participants.

If the users don't feel comfortable asking people to change their font color (I've never been shy about it, but I can see why someone wouldn't want to have to do it) you could post a note or suggestion about it on the chat page as the admin.
