For example, I want to change the alternate colours to be alternate rows (like this site) and not columns as is on our site

Also, on this site the posted time, edit icons etc are at the top above the post but on my site using the new UI they are on the left hand side.

I just want to know how to achieve all the changes that I need ...

Marc -- check that the custom XML switches are in the right 'style' used by the site settings. That may be it.

If not will you send me by email the DEV URL you are using and the Admin username/pw so that I can check into this?

By the time you get this, likely the DEV server will be running the 2.0.8 update [including the correct color for usernames]
